InFat, from Enzymotec, is an oil with a specific triglyceride composition with a higher palmitic acid content. More importantly, unlike vegetable oils, InFat's palmitic acid is located at the beta (sn-2) position of the triglycerides, which is where it naturally occurs in human milk. In vegetable oils, the incorrect placement of the palmitic acid prevents calcium from being digested. InFat addresses that problem, resulting in better nutrition, as well as greater flexibility in blending with complementary oils.
